This has been a long month. I was traveling. I was sick. I was working every night until some obnoxiously late hour.
But in the midst of all that, Kyle made me some salsa.
This is the perfect basic salsa. It's hot, but not so hot that those people that are always like, "I can't do super hot stuff" can't handle it. It's super fresh tasting, with a nice hit of acidity from the lime, and best of all, it's easy. You throw stuff into a blender. The end.
And everybody loves it. People try to convince him to sell it at farmer's markets. He gives it to people as a birthday present, and you'd think he brought them...I don't know, something more exciting than salsa.
He's agreed to let me share the secret, so here it is, in all its glory: Kyle's "Fuck Yeah!" Salsa. And the best part is that it's completely customizable: like less spice? Tone down the chilis. Want it garlickier? Toss in some more. If you happen to have a lot of fresh tomatoes, those would also be delicious in the place of canned. Really, you can't mess it up. Enjoy.
Kyle's "Fuck Yeah!" Salsa
Modified from this recipe.
- 2 cans diced tomatoes with chilis (such as Trader Joe's Fire-Roasted)
- Coarsely chopped onion (either a full smallish onion or half of a large one)
- 3-5 coarsely chopped garlic cloves
- 2-3 chopped jalapeños
- Fresh lime juice (1-2 limes, depending how big they are)
- Sea salt and cumin to taste
- Handful of cilantro
Put everything in a food processor and pulse to combine, maybe 30 seconds or so, until it's the desired consistency.
