This cocktail is definitely still a work in progress. It's a little weird. It's not quite there yet. It's not the kind of thing I would usually post (I prefer to post recipes that I'm so excited by that I can't stop talking about them), but since it's for (Re)Mixology Monday, which is supposed to be about exploring new things, I thought it made sense to share something that I tried and didn't quite succeed at. It's a large part of the process, after all.
The theme this month is orange juice. I had never thought about the fact that orange juice was so rare in cocktails. It's not in very many non-sorority-girl-type drinks, but I had never wondered why that is. It's because it's really fucking hard to work with. It overwhelms everything. It's sweet, but not sweet enough. It's acidic, but not acidic enough. It's got kind of a weird, gloppy texture. It's just...a hard ingredient.
Which is supposed to be the point! Spirited Remix chose this theme because he knew it would be a tough one for people to work with:
And if I'd had time to devote more than an hour to it, maybe I would have been more successful. As it stands, this cocktail is ok, but definitely not great. I tried a few versions: one with milk-washed rum (just tasted like orange juice); one with apple cider vinegar and lemon juice (inspired by Liquid Intelligence, the theory was that this would up the acidity of the orange juice and make it more balanced. I'm sure it works when you use the right concentrations and ingredients, but I couldn't make it happen); one without simple syrup (just tasted gross and bitter); one without the Peychaud's (boring and flat.) In the end, the one I landed on has an unusual flavor. The orange is prevalent, but the Peychaud's and chocolate give it a warm, herbal edge, and the adobo lingers on the palate. It needs fixing, though; it's unbalanced, but I'm not sure which direction it needs to go.
Suggestions, anyone? I think there's a good drink hiding in here somewhere.

Rum Cocktail With Orange, Chocolate, And Chipotle
- 2 ounces dark rum
- 1/4 ounce dry vermouth
- 1/2 ounce simple syrup
- 2 ounces orange juice
- 4 dashes chocolate bitters
- 2 dashes Peychaud's bitters
- Barspoon of sauce from chipotles-in-adobo
Combine everything in a shaker with ice. Shake and strain into a cocktail glass. Enjoy?
